This involves partial barrel fermentation and, after blending the final cuvée in the first months of 2014, maturation for at least 96 months before disgorgement and dosage which in recent years has been reduced to around 6g. to meet the freshness and minerality and not least the current demand for an expression that is a little bit drier.
