This champagne is made with very ripe Pinot Meunier and Pinot Noir (red grapes). Saignée means that the grapes firstly are lightly smashed and after that they rest a bit while the grape juice has\u003c\/span\u003e\u003cspan\u003e contact with the grape skin which gives the red color and rosé taste. And when the grapes has sit a bit, the juice is released and can now flow out slowly, that is why the method is called \"saignée\", because the grapes are bleeding out the rosé. This is a process which is mostly used in smaller production, and you will see this method being used very rarely in the bigger houses.
