A really good champagne with a strong aromatic amplitude also known as La Grande Année. Only made in the most exceptional years. La Grande Dame undergoes partly its first fermentation in oak barrels, followed by bottle aging with closed with a cork. The significant proportion of Pinot Noir gives immense power and body to the wine, and the quality of the grapes accounts for its fantastic complexity and outstanding aging potential.
One of the distinctive practices of the Bollinger house is to ferment in barrels. The aging happens in little antique oak barrels. This is how a cuvée with such intricacy and lovely delicacy is made. It has purity and refinement because to the 8 grams of sugar per liter dosage.
