This bottle is aged in Fourdres de Chêne (large oak casks) for 8 months. The base wine for this bottle if from 2008. Only the first pressing (Cuvée) is used. Natural malolactic fermentation in the barrels. The bottle is handled manually when they do the "remuage", where the bottles are turned until they are upside down and yeast and sugar residues can be "shot" out. This is a great Non Vintage champagne which can be enjoyed at any time.
